Sweet Melissa Linzer thumbprint Cookies

This weeks recipe is Pistachio Linzer Thumbprint cookies.
I didn't have any Pistachio and couldn't find any so I made them
without and they were delicious.
I used Strawberry Preserves and my kids loved them.


I think dipping them in the egg whites before they
baked made them fluffy and crisp.
My girls loved them, they will be a do over as they were really easy.
Had to make myself some coffee with these.
It rained here yesterday so it was a perfect day for
coffee and cookies and a good book.

These cookies were really easy to make. It's always great when you can do most of it in the food processor! Yours look great with the strawberry jam filling!
