Lemon Icebox Cake with Fresh Strawberry Sauce

Today's Sweet Melissa Sunday recipe came from Jennifer of Keep Passing the Open Windows. she choose the Lemon Icebox cake with Fresh Strawberry Sauce on page 208.

This was a delicious dessert that my family loved.
I did struggle with this part as it said to cook over a simmering pot of water, not boiling.
I may have cooked it too long but it turned out perfect.
I used the light , low fat sweetened condensed milk.
It was still delicious.
This was the vanilla wafers in the Spring form pan.
I did use the Low-fat vanilla wafers.
(I had to borrow the pan, thanks Judy.)


And then the meringue, half folded in and half on top and browned.
Then sat in the freezer overnight.



The Strawberry sauce just added the perfect compliment to the Lemon.
I was afraid that no one in my family would eat it because of the lemon but they all loved it.
My youngest daughter who hates everything said it was delicious.

We will try this recipe again, it was cool and refreshing.
